Dandelion Vineyards Firehawk McLaren Vale Shiraz is a silky, savoury Shiraz with rich plum fruit and a long line of acidity.

Dandelion was established in 2007 by Elena and Zar Brooks to work with established growers across South Australia's best-known regions. For Firehawk, the fruit comes from McLaren Vale, where a maritime climate and a mosaic of soils make for Shiraz that is generous but rarely clumsy. The 2023 opens with raspberry, cinnamon, violets and crushed pink peppercorn, then settles into plum on a sleek palate. Fine tannins arrive late and add a rolling texture, giving richness without anything heavy-handed.

Open it with rare scotch fillet, lamb shoulder or a mushroom and lentil pie, serving at around 16 to 18 degrees. A brief decant helps it open, and it should cellar well over the medium term.
