Dandelion Vineyards Legacy of Australia Pedro Ximénez is a rich, aged fortified wine made from the Pedro Ximénez grape.

Pedro Ximénez is the grape behind Spain's famous sweet sherries, and South Australia has a long tradition of fortified winemaking with it. Dandelion Vineyards, the label of winemaker Elena Brooks and Zar Brooks, bottles this aged fortified in a 375ml size. It is deep amber with an olive rim, with toasted pecan, fig, toffee, crème brûlée and orange peel on the nose. The palate is sweet and rich, with marmalade, candied fruit and apricot, finishing dry thanks to complex aged rancio character.

Serve slightly chilled or at cool room temperature in a small glass. Pour it over vanilla ice cream, pair it with sticky date pudding or blue cheese, or enjoy it on its own after dinner. Once opened, it keeps well for several weeks.
