Dandelion Vineyards Twilight of the Adelaide Hills Chardonnay is a cool-climate Chardonnay made with a nod to Chablis and white Burgundy.

Founded to give old, family-tended vineyards across South Australia a voice, Dandelion has Elena Brooks as its winemaker. Her Chardonnay comes from the Adelaide Hills, where altitude and cool nights let the grapes ripen slowly and hold their natural acidity. The aim is a wine built on line and freshness: citrus and white stone fruit wrap around a firm acid backbone, with a clean, mineral purity and just enough grip and texture to give it presence. The winemaking is gentle, working with free-run juice and a light touch of French oak, so the fruit and the site do the talking. It is a Chardonnay that should please Chablis drinkers and lovers of richer white Burgundy alike.

Serve well chilled, though not ice cold, so the texture can show. It pairs nicely with grilled snapper, roast chicken with lemon and thyme, or crab linguine. Enjoy it over the next few years while the freshness is at its peak.
