Dandelion Vineyards Wishing Clock of the Adelaide Hills Sauvignon Blanc is a fresh, fragrant Sauvignon Blanc from the high country outside Adelaide.

Dandelion is the South Australian label of winemaker Elena Brooks and Zar Brooks, established in 2007 and built on partnerships with growers in the state's key regions. For this wine the fruit comes from the Adelaide Hills, where altitude and cool evenings give Sauvignon Blanc its purity and crunch. The 2025 is light and bright, with gooseberry, honeysuckle and a mineral, rain-on-stone freshness. The palate has green apple, lemon and lime, a touch of musk and orange peel, and fine acidity for balance.

Pour it icy cold on a summer evening with fish and chips, a herb-heavy Thai salad or fresh oysters.
