Dark Matter Spiced Rum 700ml

Dark Matter is Scotland's first spiced cane spirit, distilled in Aberdeenshire.

It is made at a purpose-built distillery at Banchory, between Aberdeen and the Cairngorms, from refiner's grade molasses, a high-purity grade now rarely used in rum distillation. The approach is produce-based rather than syrup-based: after distillation the spirit is infused for a week with fresh spices, and the recipe is as notable for what it leaves out as for what it includes, with no vanilla and no caramel colouring. The infusion takes in fresh ginger, green peppercorns, hand-crushed allspice berries and Indian long pepper, a hotter relative of black pepper. A small quantity of molasses, 60 grams per litre, is returned to the spirit at the end to settle the balance between sweetness and spice, and the quality of that molasses accounts for much of the texture.

Serve long over ice with ginger beer and lime, or in a Dark and Stormy. It also stands up to grilled pork, jerk chicken and sticky ribs.
