Description
David Duband Gevrey Chambertin is a village red from the largest commune of the Côte de Nuits and the one with the most grand cru land.
Gevrey-Chambertin spreads north of Morey-Saint-Denis and takes in a wide sweep of vineyard, from the grand cru band on the mid-slope south of the village to a broad apron of village land on deeper, more alluvial soils below the road and up into the cooler Combe de Lavaux. Village wines are typically assembled from several of these parcels, and the commune's reputation rests on depth and dark-fruited structure rather than the perfume of Chambolle. Pinot Noir is the only grape. Duband farms organically from his base at Chevannes, ferments with a generous share of whole bunches and raises the wine in oak barrel with restrained new wood, sealing it under a Diam closure.
Deep and savoury, a match for beef, game and mature cheeses; serve at around 17 degrees.
