Description
David Duband Hautes Côtes de Nuits blanc is a cool-climate Chardonnay from the limestone hills above the Côte de Nuits, made by a domaine far better known for its whole-bunch reds.
The Bourgogne Hautes-Côtes de Nuits appellation covers the plateau and the side valleys west of the Côte de Nuits, where vineyards sit a couple of hundred metres higher than the famous slope, on thin soils over hard limestone, and ripen noticeably later. David Duband farms from Chevannes, high in these hills, and works his vineyards organically. The white is Chardonnay, handled the way white Burgundy is handled here: whole-bunch pressing, a slow fermentation in barrel and ageing on fine lees before bottling. Altitude is the defining factor, holding acidity firm and keeping the wine built on tension and citrus rather than weight.
A fresh, taut style that suits oysters, goat cheese and simply grilled white fish; serve at around 11 degrees.
