Description
David Duband Latricières Chambertin is a grand cru from the narrow strip of vineyard immediately south of Le Chambertin itself.
Latricières-Chambertin is one of the smallest of the Gevrey grand crus, a band of about seven hectares continuing the line of Chambertin towards Morey-Saint-Denis. It lies at the mouth of the Combe Grisard, which funnels cooler air across the vines, and its soils are shallow and notably stony with a high active limestone content. The combination gives a cooler, more mineral and tightly drawn wine than its illustrious neighbour, firm in youth and slow to open. Pinot Noir is the only grape. David Duband farms organically, ferments with a generous share of whole bunches and works by gentle infusion, ageing in oak barrel with new wood in proportion to the vineyard's standing.
Cool-toned and tightly wound, it wants game, beef and time in the cellar; serve at around 17 degrees and decant young bottles.
