Description
David Duband Nuits St Georges Aux Thorey is a premier cru from the northern edge of the commune, where Nuits-Saint-Georges meets Vosne-Romanée.
Aux Thorey sits on the mid and upper slope at the Vosne end of Nuits-Saint-Georges, alongside Aux Boudots and Aux Cras, on stony, well-drained limestone soils with only a light covering of clay. Vineyards in this northern sector give the most aromatic and supple wines of the commune, with the fine-grained tannin of Vosne rather than the broad-shouldered grip found at the Premeaux end. Pinot Noir is the only grape. David Duband farms organically from Chevannes, ferments with a generous proportion of whole bunches and works by infusion rather than hard extraction, ageing in barrel with restrained new oak; the wine is sealed under a Diam closure, as across the range.
Supple and perfumed for a Nuits, it suits duck, game birds and mushroom dishes; serve at around 17 degrees.
