Dawson James Chardonnay 2021

Dawson James Chardonnay is a fine, mineral Chardonnay from southern Tasmania, held back before release by two very experienced winemakers.

Slow ripening over a long, cool season is the key here: it builds depth and texture while the fruit keeps its natural acidity. The grapes are grown at Meadowbank, north-west of Hobart, and the wine is fermented and matured in French oak for structure. Holding wines back for some bottle age is a signature of the partnership between Peter Dawson and Tim James, both formerly senior winemakers at Hardys.

Fine and layered, with citrus, stone fruit and a gentle oak frame. Serve at 10–12°C with crab, scallops, roast chicken or a soft cheese.
