Denton Cabernet Sauvignon 2022

Denton Cabernet Sauvignon is a Yarra Valley Cabernet grown on the warm upper slopes of the estate granite hill.

2022 gave the Yarra a long, mild summer with rain that arrived when it was wanted, the kind of season that rewards growers willing to wait. Picking came at the end of March from the north-western aspect, where Cabernet ripens most reliably on this property. Ninety per cent of the fruit was destemmed, fermentation ran wild, and sulphur additions were kept to a minimum. After pressing, the wine went into 500-litre puncheons for a year of quiet maturation, then to bottle in late 2023 with no fining and no filtration. Large-format seasoned wood keeps oak out of the conversation.

Cassis and dark plum sit against dried herbs and a fine, dusty tannin line, with Yarra acidity keeping it lively. Decant briefly and pour at 16 to 18 degrees. Try it with roast lamb shoulder, slow-cooked beef cheeks, or a mushroom and thyme pie.
