Denton Chardonnay 2022

Denton Chardonnay is a single-vineyard Yarra Valley Chardonnay from the Dijon 96 clone.

View Hill is an unusual piece of ground: a cone, so every aspect is available somewhere on the property, with sandy soils lying over granite boulders that shape both the flavour and the structure of what grows here. Recent work has gone into soil health, through organic management, cultivation under the vines and a move away from herbicides, with Kirilly Gordon in the cellar and Julian Parrott running the vineyard. The Chardonnay comes off the north-eastern face, which catches soft morning light and is shaded from afternoon heat. Dijon 96 gives length and fine structure. Bunches were pressed to old puncheons for fermentation, malolactic and maturation.

Expect white peach and grapefruit pith, a chalky middle and a long, saline close, with oak sitting well back. Serve at 10 to 12 degrees in a decent-sized glass. Roast chicken, scallops with brown butter, or a gratin of leeks and cream all work.
