Denton Nebbiolo 2021

Denton Nebbiolo is a Yarra Valley Nebbiolo from the estate original hillside plantings.

Nebbiolo is the serious business here. Eight of the eighty acres are given to six clones of it, with more planned, which is a substantial bet on a variety most Australian growers treat as a curiosity. Block 2A sits halfway up the north-western slope, catching every hour of available sun so ripening runs long and slow, the only way this variety gets properly ripe in its skins and seeds. Fruit was destemmed, fermented on wild yeast without temperature control, and held twelve days on skins with frequent plunging and foot stomping. Then 500-litre French puncheons, a fifth of them new, eighteen months unsulphured, and bottling without fining or filtration.

Sour cherry, rose petal and tar, with the tannin grip the variety is known for and a long, drying finish. Decant it, and serve at 16 degrees. Braised beef with polenta, slow-cooked rabbit, or a mushroom ragù with plenty of parmesan.
