Description
Denton Ribolla Chardonnay is a skin-contact white blend of Ribolla Gialla and Chardonnay from the Yarra Valley.
Less than fifty dozen were made, which tells you this is an experiment being taken seriously. An acre of Ribolla Gialla went in near the Chardonnay at the bottom of the cooler north-eastern slope three years before this vintage, and 2022 was the first crop. That Ribolla was left hanging until the skins began to turn colour and flavours deepened, then held fourteen days on skins and rested ten months in tank. The Chardonnay, P58 clone, came in earlier and had a week on skins before its fermentation and rest in old barrique. The two were blended at seventy-five per cent to twenty-five and bottled without fining or filtration.
Quince, dried apricot and orange peel, with a light phenolic grip and a savoury, tea-like finish. Serve it cool but not cold, around 12 degrees, in a wine glass with room. It is good with roast pumpkin, charcuterie, a Spanish tortilla, or hard sheep cheese.
*Every effort is made to ensure the current vintage is accurate; however, variations can occur. If you are after a specific vintage, please contact us prior to ordering.
