Denton Ribolla Gialla 2024

Denton Ribolla Gialla is a Yarra Valley skin-contact white made from a small parcel of Ribolla Gialla.

The 2024 growing season split in two: heavy spring rain, then a dry, warm run to harvest, which made the pick date the most important decision of the year. Getting it right meant holding acidity while letting the skins fill out, since this wine spends sixty days fermenting on them. The plot runs to 0.4 hectares, planted before the Bishop family arrived in 2024, and the variety itself comes from Friuli, where Gravner made its name. Hand harvested, destemmed, spontaneously fermented and gently pressed to stainless steel, with amphora likely to join the maturation in time.

Aromatically it leans floral and citrus-peeled, with nashi pear, a mineral thread and a fine tug of tannin on a dry finish. Twelve to fourteen degrees. Pair it with pork and fennel sausages, a vegetable tagine, salted nuts, or an aged cheddar.
