Denton Shed Rosé 2023

Denton Shed Rosé is a dry Yarra Valley rosé, half Shiraz and half Cabernet Sauvignon.

Both halves of the blend come off the granite hill, but from different faces of it: the Shiraz from the top of the warm, west-facing slope, the own-rooted Cabernet from high on the northern side. Everything was pressed as whole bunches straight to tank for a natural fermentation, then given six months in old oak, which adds texture without colour or oak flavour, and bottled without fining or filtration. Perfume, texture and drinkability are what the Shed range is after, so this one is built light and delicate instead of deep and sweet.

Pale in the glass, with wild strawberry, watermelon rind and a dry, chalky finish. Serve it properly cold, 8 to 10 degrees. Take it to a barbecue, or drink it with prawns, a niçoise salad, charcuterie, or goat cheese on toast.
