Description
Denton Shed Skins Chardonnay is a Yarra Valley Chardonnay fermented on its skins.
Fruit came off a block low down the cooler north-eastern face of View Hill, a cone-shaped property whose many aspects and granite-loaded soils make it unusual in the Yarra. Kirilly Gordon used Mendoza and Gingin clones for this vintage, both of them flavour-forward, which counts when the wine is going to carry phenolic grip. Picking waited until flavour and phenolic ripeness peaked late in the season. The bunches were destemmed and fermented on skins for two months, then pressed to seasoned barriques for maturation. The result sits closer to an orange wine than to conventional Chardonnay.
Two months on skins bring dried peach, ginger and a bitter-orange finish, with tannin you can feel on the gums. Serve at 12 to 14 degrees in a big glass. It stands up to roast pork, Moroccan carrots, tempura vegetables, or a mature Comté.
