Denton View Hill Rosé 2025

Denton View Hill Rosé is a dry Yarra Valley rosé in equal parts Nebbiolo, Shiraz and Cabernet Sauvignon.

Nebbiolo in a rosé is the interesting part here: Julian Parrott picked clones from the six-clone block chosen for strong aromatics and fine tannin, which is exactly what you want when the skins are only in contact briefly. All three varieties were hand harvested and pressed to tank overnight, then racked and fermented separately on ambient yeast, some in egg and some in old oak, with occasional lees stirring to build texture. Blending happened only just before bottling, which keeps each component's aromatics intact.

Redcurrant, pink grapefruit and rosewater, with a silky, mouth-watering middle and a dry, savoury finish. Serve at 9 to 10 degrees. Good with a whole roast snapper, chicken and tarragon, a plate of jamón, or a summer tomato salad.
