Didier Dagueneau Blanc Fumé de Pouilly Cellar Release 2015

The domaine's principal Pouilly-Fumé cuvée, held back in the Dagueneau cellar and released with several years of bottle age.

Blanc Fumé de Pouilly is the historic name for the appellation and the estate has always preferred it. The wine is assembled from younger vines across the domaine's parcels at Saint-Andelain on the right bank of the upper Loire, including plantings within the Pur Sang, Buisson Renard and Silex sites, so it shows the range of the estate rather than one vineyard. Didier Dagueneau began in 1982 and his methods were exacting: severe yields, roughly double the usual vineyard labour, horse ploughing in places and several passes through the vines at harvest. Louis-Benjamin Dagueneau has run the twelve hectares since his father's death in 2008. This cuvée is raised about half in stainless steel and half in large neutral barrels; the extra time in the estate's cellar lets its early tension unwind.

Ready to drink now and holding well. Serve at 10–12°C with roast chicken, grilled snapper or an aged goat's cheese.
