Description
Disznókő Aszú 6 Puttonyos is a sweet Tokaji made entirely from Furmint aszú berries.
Tokaj, in northeastern Hungary, produces sweet wine by a method found nowhere else: individually picked botrytised berries, called aszú, are macerated in a base wine and must before pressing. Disznókő is a first-growth site classified in the eighteenth century, on volcanic soils at the southern edge of the region. For this bottling the aszú berries were all Furmint, gathered in the second half of the harvest from mid-October into November, and macerated in a base of Furmint and Hárslevelű. After a long pressing, fermentation ran in stainless steel until December, and the wine then spent two years in 225-litre oak barrels, a quarter of them new. It was bottled at 158 grams per litre of residual sugar, the concentration the six puttonyos designation implies.
Ready to drink and able to keep for decades. Serve at 8-10°C with foie gras, blue cheese or a simple apple tart.
