Disznóko Discovery of the Great Tokaj Pack is a three-bottle set of botrytised sweet wine from the Disznókő estate in Tokaj.
Tokaj, in north-eastern Hungary, is where botrytised sweet wine was first made systematically, and its classification of vineyard sites predates those of Bordeaux and Burgundy. Aszú is produced by adding hand-picked, individually selected botrytis-affected berries to a base wine and macerating them; the puttonyos figure indicates how much aszú fruit went in, and therefore how sweet and concentrated the result is. Eszencia is the free-run juice that seeps from those berries under their own weight, so dense that it takes years to ferment and finishes at very low alcohol. Disznókő is a first-growth site on the southern edge of the region, on volcanic soils over clay and loess. The pack holds one bottle each of a five puttonyos Aszú, a six puttonyos Aszú and an Eszencia.
All three will keep for decades; serve at 8-10°C in small measures, with foie gras, blue cheese or a simple fruit tart.
