Description
Disznókő Dry Furmint is a tank-fermented dry white from a Tokaj estate far better known for its sweet wines.
Tokaj built its reputation on botrytised Aszú, but dry Furmint has become an important part of the region's output, and this is a relatively recent addition to the Disznókő range. The fruit comes from several plots on volcanic and clay soils that were always earmarked for dry wine rather than picked over for noble rot, and the harvest is done by hand with particular care taken to remove any botrytised berries, which would otherwise skew the balance. Vinification is in tank, with no oak, the aim being to hold on to the purity, juiciness and mineral character natural to the variety. Furmint has naturally high acidity and enough phenolic substance to give the wine some grip, and the result is zesty and racy with nectarine, grapefruit pith and ripe apple skin, and a flinty, salt-licked close that invites comparison with a vibrant Chablis.
Drink it over the next five years. It suits oysters in particular, along with other seafood and roast poultry or game birds; serve at 10–12°C.
