Disznóko Mad about Kapi Pack 500ml

Disznóko Mad about Kapi Pack is a three-bottle vertical of the estate's single-vineyard Kapi Aszú 6 Puttonyos, in half-litre format.

Tokaj lies in the northeast of Hungary, where autumn mists off the Bodrog and Tisza rivers bring the botrytis that makes Aszú possible. Grapes without botrytis are picked first and made into a base wine; the shrivelled Aszú berries are added to it afterwards, in the proportion the year allows, then the wine ferments slowly and matures at least two years in Sauternes barrels from Château Suduiraut. Kapi is a super-premium 6 Puttonyos wine from a single parcel, the first site Disznókő identified as a grand cru and vinified separately, and it is made only in exceptional years and in very small volumes. Planted on the upper part of the estate's southern slopes, the plot has lighter, more mineral soil than the rest of Disznókő, and it is bottled as a single variety: 100 per cent Furmint.

These will hold for decades in bottle and for a week or two open in the fridge. Serve at 8-10°C with foie gras, poached stone fruit or Stilton.
