Disznókő Tokaji Aszú 5 Puttonyos is a botrytis sweet wine from one of Tokaj's historic first-growth estates, in 500ml.
Tokaji Aszú is made by picking botrytis-shrivelled aszú berries one by one and steeping them in base wine or must before pressing and ageing, the puttonyos number indicating the concentration of the finished wine. Disznókő lies at the southern edge of the Tokaj region on volcanic clay soils and was classified a first growth in 1772. This bottling blends 69 per cent Furmint with 25 per cent Zéta and 6 per cent Hárslevelű and carries around 155 grams per litre of residual sugar. It is a detailed wine of rare aromatic complexity, with fresh and dried fruit, earthy spice and floral honey notes, and the tangy cut of orange and bergamot balancing the sweetness. Savoury elements of umami and camomile add depth, while the firm acidity brings lightness and a clean finish.
Drinking well now and capable of decades in the cellar. Serve at 8-10°C with young blue cheese, a hard sheep's cheese or fruit-based desserts.
