Disznókő Tokaji Aszú 6 Puttonyos Kapi is a single-vineyard, single-variety Aszú produced only in exceptional years.
Tokaj in north-eastern Hungary is where autumn mists off the Bodrog and Tisza reliably bring botrytis, and Aszú is made by macerating hand-picked botrytised berries in a base wine and then ageing what results; the puttonyos number records the concentration, six being the highest of the traditional levels. Disznókő is a first-growth estate, classified as such in 1772, at the southern gateway to the region. Kapi was the first plot the estate identified and vinified separately as a grand cru site. It lies on the upper part of Disznókő's southern slopes, where the soil is slightly lighter and more mineral than elsewhere on the property, and it has come to be known for the delicacy and precision of its wines. Kapi is made in very limited quantity and, unusually for Aszú, is entirely Furmint rather than a blend, balancing considerable depth with the zesty mixed-citrus freshness that marks the house.
It will develop for decades and is best opened well ahead. Serve at 8-10°C with foie gras, blue cheese or a simple fruit tart, or on its own.
