Description
Disznókő Tokaji Dry Furmint comes from one of the first estates in Tokaj to bottle a dry wine from the variety, in 1992.
Tokaj is best known for its botrytised Aszú, but dry wines have been made in Hungary for as long as sweet ones, and today around seventy per cent of the region's production is dry. Disznókő is a first-growth estate on the southern edge of the Tokaj hills, its vineyards planted on steep, mineral-rich volcanic soils of rhyolite and clay. Unlike the region's dry Szamorodni, which is made from botrytis-affected bunches, this wine is drawn from parcels farmed specifically for dry production and picked healthy. It is pressed gently, fermented cool and matured on its lees in tank rather than barrel, so nothing gets in the way of Furmint's natural cut. The result is bone dry, with the tension and chalky drive the variety takes from these soils and a distinctly briny finish.
Drink young and over the next five years; serve at 10-12°C as an aperitif, with oysters and other seafood, or with roast poultry and game birds.
