Description
Disznókő Tokaji Eszencia is the free-run nectar of botrytised Furmint berries, made only a few times each decade.
Eszencia is the rarest style in Tokaj and among the most storied sweet wines in the world, mentioned in Hungary's national anthem and once sold through apothecaries for its supposed restorative powers. Botrytised aszú berries are picked one by one and rested in a wooden keg for fifteen to twenty days without crushing, so that only the weight of the fruit itself presses out the juice. That free-run nectar is drizzled into fifty-litre demijohns and left to ferment naturally in the estate's cold, dark cellars. Fermentation is glacially slow and can run for years, typically reaching only two or three per cent alcohol and often less. Regulations require at least 450 grams per litre of residual sugar, and levels above 900 grams are not unknown. This release, made in half-bottle, carries 681 grams of residual sugar with 11 grams of acidity, which is what holds the wine in balance.
Serve in tiny measures as a wine to contemplate, or with foie gras, blue cheese or a simple almond biscuit, at 8-10°C. It will keep for decades.
