Description
Disznókő Tokaji Eszencia is the free-run nectar of hand-picked botrytised berries, made only a few times a decade and fermenting for years to barely 3 per cent alcohol.
Eszencia is the rarest category in Tokaj and one of the most storied sweet wines anywhere, mentioned in Hungary's national anthem and once sold through apothecaries. Aszú berries are collected one by one and rested in a wooden keg for 15 to 20 days without crushing, so that only the weight of the fruit itself releases any juice. At Disznókő that free-run juice, from 100 per cent botrytised Furmint, is run into 50-litre demijohns and left to ferment naturally in the estate's cellars. Fermentation is glacially slow: four years may bring the wine to 2 or 3 per cent alcohol, and many never reach 1 per cent. Residual sugar must be at least 450 grams per litre and can exceed 900. The result is intensely concentrated yet remains poised.
Effectively immortal in the cellar and served in tiny measures, traditionally from a spoon; offer it at 8-10C on its own or with a plain almond biscuit.
