Disznókő Tokaji Late Harvest Furmint is a botrytis-influenced sweet wine made without the berry-by-berry selection of Aszú, in 500ml.
Known in Hungarian as Késői Szüretelésű, late harvest Tokaji is picked as whole botrytised bunches rather than as individually selected aszú berries, which makes for a fresher, less concentrated style. At Disznókő, László Mészáros makes this wine mainly from botrytised Furmint, with small amounts of Zéta and Hárslevelű, from grapes shrivelled to around half their original volume. The bunches were macerated briefly before pressing, and the wine was racked into used French oak, including barrels from Disznókő's sister property Château Suduiraut in Sauternes, where it matured for six months. The short ageing preserves Furmint's pungency, fruit aromas and energy. Residual sugar sits around 100 grams per litre, well balanced by punchy acidity and gentle grip, giving pineapple, honeycomb and juicy citrus in a vibrant, modern reading of Tokaji.
Drink now and over the next decade, and note it keeps a fortnight in the fridge once opened. Serve at 8-10°C as an aperitif, or with goat's cheese, pâté on toast or a fruit tart.
