Disznóko Vertical Collection n°1 Pack is a three-bottle vertical of Tokaji Aszú 5 Puttonyos in half-litre format, covering 2015, 2016 and 2017.
Tokaj lies in the northeast of Hungary, where autumn mists off the Bodrog and Tisza rivers bring the botrytis that makes Aszú possible. Grapes without botrytis are harvested first and made into a base wine; the shrivelled Aszú berries are picked separately and added to it, whole or as a paste, in the proportion the year allows. Because those berries hold almost no juice, the technique lets them swell before pressing. Fermentation crawls for as long as it takes, and the wines are then matured at least two years in Sauternes barrels from Château Suduiraut. The proportion of Aszú was historically counted in puttonyos, the hods used to carry the grapes; today the classification rests on residual sugar, with a minimum of 120 grams per litre for 5 Puttonyos and 150 for 6. Disznókő is a first-growth site on the southern edge of the region, and its Aszú is led by Furmint with Hárslevelű and other indigenous varieties in support.
All three will keep for decades, and an open bottle holds for a week or more in the fridge. Serve at 8-10°C with foie gras, a fruit tart or a mature blue cheese.
