Domaine aux Moines Savennières Roche-aux-Moines 1.5L MAGNUM 2022

Domaine aux Moines Savennières Roche-aux-Moines, in magnum, comes from an organically farmed parcel in a vineyard-appellation shared by only a dozen growers.

Roche-aux-Moines is a small appellation within Savennières, on the north bank of the Loire near Angers, and its history runs back to the Cistercian monks of the twelfth century who also planted the neighbouring Coulée de Serrant. The name, the Monks' Rock, refers to the schist bedrock and the volcanic stones scattered through the soil. Tessa Laroche is one of only twelve vignerons with a parcel here, and she farms organically. Fruit from younger vines is declassified, yields are held to around 30 hl/ha and the grapes are picked at ripeness over six successive passes through the vineyard. In the cellar the wine ferments with indigenous yeasts and ages eighteen months on lees in used 220- and 400-litre barrels and 20-hectolitre foudre, now completing malolactic conversion every year, with sulphur added only at bottling.

Dry, intense and built to age, it will improve for a decade or more in magnum; serve with roast pork, scallops or a mature hard cheese at 10-12°C.
