Domaine aux Moines Savennières Roche aux Moines is a dry Chenin Blanc from a walled cru of barely thirty-three hectares shared between only a dozen growers.

Savennières Roche aux Moines is a small standalone appellation on the north bank of the Loire west of Angers, set on the same steep schist ridge that carries Coulée de Serrant next door. Both sites trace back to the Cistercian monks who planted here in the twelfth century, and the name — the monks' rock — refers to the schist bedrock and the volcanic stones scattered through the topsoil. Tessa Laroche farms her parcel organically on the plateau above the wider Savennières appellation. Fruit from younger vines is declassified, yields are held to around 30 hl/ha, and the grapes are picked at ripeness across six successive tris. Fermentation runs on indigenous yeasts and the wine spends eighteen months on lees in a mixture of used 220- and 400-litre barrels and 20-hectolitre foudre. Malolactic conversion is now allowed to complete every year, and the only sulphur addition is made at bottling.

Open and generous on release, though it will reward five to ten years in the cellar. Serve at 10-12°C with roast chicken, scallops or a well-aged Comté.
