Domaine Benoit Badoz Savagnin Typé Côtes du Jura 2020

Domaine Benoît Badoz Savagnin Typé is made in the Jura's oxidative style, under a veil of yeast.

Typé indicates the traditional method: the barrel is not topped up as the wine evaporates, and a film of yeast called the voile forms on the surface, protecting the wine while giving it the nutty, curry-spice character the region is known for. Savagnin is the grape behind it, and the same approach taken further produces Vin Jaune.

Serve at 13 degrees with comté, chicken in cream sauce or walnuts. It will keep for a decade or more.
