Description
Domaine Benoît Badoz Vin Jaune is the Jura's most singular wine, aged six years under a veil of yeast.
Vin Jaune must spend six years and three months in barrel without being topped up, losing a substantial share to evaporation while a film of yeast protects what remains and transforms it. What is left is bottled in the clavelin, a squat 620ml bottle said to represent what survives of an original litre. The grape is Savagnin and the wine is bone dry.
Serve at 14 degrees with comté, chicken in vin jaune sauce or walnuts. An opened bottle keeps for weeks, and a closed one for decades.
