Domaine Bernard Baudry Chinon Le Clos Guillot 2022

Le Clos Guillot is Bernard Baudry's Chinon from a south-east-facing tuffeau slope that includes the domaine's last remaining ungrafted vines.

The Clos Guillot vineyard lies on clay, chalk and the yellow limestone known locally as tuffeau, very close to Le Chêne Vert, the site made famous by Charles Joguet. Baudry planted here between 1993 and 2000, and the parcel also holds what is left of the estate's ungrafted vines, which once went into a separate Franc de Pied cuvée and are now blended in. The vineyards are farmed organically. Harvesting is by hand and yields never exceeded 40 hectolitres per hectare. Fermentation took place in large wooden fermenters with regular pigeage for gentle extraction, and after around twenty days on skins the wine was pressed off and matured twelve months in lightly seasoned oak barrels, then nine months in cement, and bottled without filtration. Matthieu Baudry describes it as a very pure expression of Chinon.

Rewarding five to twelve years in the cellar. Serve at 16 to 18°C with roast lamb, duck or a goat's cheese from the Loire.
