Domaine Bernard Baudry Chinon Le Domaine is an organic Cabernet Franc drawn from the estate's high plateau vines above Chinon's première côte.
Chinon is Cabernet Franc country on the Vienne in Touraine, and Bernard Baudry, joined since 2000 by his son Matthieu, is one of its reference producers. Le Domaine is the estate's principal cuvée. Most of the fruit comes from vines averaging around thirty-five years on sandy, limestone-rich soils, with a further twenty to thirty per cent from slightly younger vines on gravel. The main vineyard behind it is called Cimetière aux Chiens, dog cemetery, most likely a reference to the limestone that litters the ground there. The vineyards are certified organic. Fruit is picked by hand and ferments naturally in traditional cement vats, then ages in a mixture of concrete and old casks for fifteen months before bottling unfiltered, two springs after harvest. That is a longer élevage than the domaine once used, and Matthieu Baudry credits it with bringing more limestone character to the wine.
Approachable now and worth eight to ten years. Serve at 16-18°C with roast lamb, pork rillettes or a Loire goat's cheese.
