Domaine Bernard Baudry Chinon Les Grézeaux 2021

Domaine Bernard Baudry Chinon Les Grézeaux comes from the estate's oldest vines, on gravel over clay-limestone on the Sonnay plateau.

Les Grézeaux is drawn from vines of between fifty and seventy years of age, planted on a gravelly terroir over limestone and clay on the Sonnay plateau above Cravant, directly in front of the Baudry cellar. Gravel over clay-limestone is the combination that gives Chinon its more structured reds, and this is the cuvée in the range that shows it most clearly. The vineyards are certified organic. The grapes are picked by hand and ferment in cement vats for fifteen to twenty days, after which the wine matures in cement until bottling two winters after harvest, so no oak enters at any stage. The style is restrained rather than demonstrative: more mineral and floral than spicy, with gravelly tannin, bright acidity and a peppery edge that comes from the low pH of the fruit.

Good now with air, and it will develop for ten years or more. Serve at 16-18°C with roast lamb, braised beef or a hard goat's cheese.
