Chablis sits at the northern edge of Burgundy, and Côte de Léchet is one of its left-bank premiers crus: south-east facing, with shallow soil over hard Kimmeridgian limestone, which tends to produce a taut and chalky wine rather than a rich one. Bernard Defaix founded the domaine at Milly in 1959 and it is now run by his sons Sylvain and Didier, together with Didier's wife Hélène. Nine hectares of the estate lie in this cru, eight of them planted with vines of 35 to 40 years that supply this bottling, the oldest hectare reserved for a separate cuvée. Farming has been certified organic by Ecocert for about fifteen years. The wine ferments on natural yeasts and is raised largely in tank with a small proportion of used barrels, without lees stirring.

The larger format slows development, so a magnum will hold its freshness and gain complexity for longer than the standard bottle — worth three to twelve years. Serve at 10–12°C with roast chicken, grilled snapper or a plate of oysters for a table of six.
