Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet, here in magnum, comes from the estate that holds more of this premier cru than anyone else.

Côte de Léchet is a steep, thin-soiled premier cru on the left bank of the Serein, a bony hill of Kimmeridgian limestone that tends to give the tautest and most saline wines of the Chablis premiers crus. The Defaix cellars sit directly beneath it in the hamlet of Milly, and the domaine is the largest holder in the vineyard as well as its only certified organic grower, which has made it the site's emblematic producer. As elsewhere in Chablis, the finest vineyards have come to be associated with a single name. The wine is handled without heavy oak so the limestone character stays in the foreground, and it is closed under screwcap. The 1500ml format ages more slowly than a standard bottle.

Worth five to ten years in the cellar, and the magnum will reward the longer end of that. Serve at 10-12°C with turbot, roast chicken or a platter of shellfish.
