Description
Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet comes from the estate most closely identified with the cru, and is the only certified organic holding within it, bottled here in magnum under screwcap.
Côte de Léchet is a steep, narrow premier cru on the left bank of the Serein above the village of Milly, facing south-east across the valley. Its thin Kimmeridgian soils and sharp incline give a lean, chiselled style of Chablis, and in Burgundy the finest sites have a way of becoming associated with a single grower — here that grower is Bernard Defaix. The domaine is the largest owner within the cru, its cellars sit at the foot of the Léchet hill, and Didier Defaix is the vineyard’s emblematic vigneron as well as its only certified organic farmer. The magnum is closed under screwcap, which suits a wine whose appeal rests on tension and precision and slows its development further in the larger format.
Drinking now and capable of eight to ten years in magnum. Serve at 10-12°C with oysters, grilled whiting or a young goat’s cheese.
