Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet, here in magnum, comes from the largest holding in a premier cru the domaine has effectively made its own.
Côte de Léchet is a southeast-facing premier cru on the left bank of the Serein, overlooking the village of Milly, and its Kimmeridgian marl gives Chablis of white-fruited intensity and pronounced mineral drive. Domaine Bernard Defaix holds nine hectares within the cru, more than any other grower, with its cellars at the foot of the Léchet hill, and Didier Defaix is the only certified organic grower on the site. The vines are farmed accordingly. To build complexity without covering the fruit, a quarter of the wine is fermented in old, neutral barrels previously used for the domaine's old-vine Reserve Léchet bottling, with the remainder raised in tank. Bottling is under Diam closure, and this is the 1.5-litre magnum format, which slows the wine's development in bottle.
Drink from release through the next decade, and pair it with oysters, scallops or a simply grilled white fish. Serve at 10 to 12 degrees.
