Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet 2000 Museum Release

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet Museum Release is an aged bottling shipped directly from the domaine's own cellar.

Côte de Léchet is the premier cru on the left bank of the Serein above the hamlet of Milly, a steep, exposed slope of Kimmeridgian limestone. Domaine Bernard Defaix is the largest holder in the vineyard with eight hectares, its cellars sitting at the foot of the hill, and Didier Defaix is the site's emblematic grower as well as its only certified-organic one. The wines are approachable young, but they tend to reach their peak only after a decade or more in bottle, which is the reasoning behind this cellar-aged release, held at the domaine and shipped from there rather than bought on the secondary market. A quarter of the fruit was fermented and matured in old neutral barrels previously used for the estate's old-vine Réserve bottling, the remainder in tank.

Fully mature and ready to drink now. Serve at 10-12°C with roast chicken, scallops or a mature hard cheese.
