Description
Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet comes from nine hectares in the vineyard, the largest single holding and the only certified-organic one.
Côte de Léchet rises directly above the village of Milly on the left bank of the Serein, facing south-east on Kimmeridgian marl. Domaine Bernard Defaix has its cellars at the base of the hill and holds more of the premier cru than any other grower, which makes Didier Defaix its emblematic vigneron as well as the site's only certified-organic farmer. Léchet has a reputation for white-fruited, markedly mineral wines with more intensity than the neighbouring Beauroy, and the domaine's approach is built around preserving that. A quarter of the wine is fermented in old, neutral barrels that previously held the estate's old-vine Réserve Léchet bottling, adding complexity and a little breadth without wood flavour, while the rest stays in tank. The bottle is sealed with Diam.
Drinkable on release and will reward five to eight years. Serve at 11-12°C with roast chicken, seared scallops or a mature comté.
