Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet Réserve 2020

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet Réserve is drawn from a single hectare of 60-year-old vines mid-slope in the family's home vineyard.

The Côte de Léchet rises above Milly, just west of Chablis, and Domaine Bernard Defaix is its emblematic grower: the largest holder in the premier cru, with cellars at the foot of the hill and the only certified organic farming on the site. Didier Defaix bottles this selection alongside the regular Côte de Léchet, sourcing it from one hectare of 60-year-old vines on the mid-slope. The aim is to show what those old vines can add, a more layered and seductive wine than the standard cuvée without losing the Kimmeridgian tension the hill is known for. Just under half the wine was matured in tank, the remainder in wood, mainly used 228-litre Burgundian pièces from sister estate Jaeger-Defaix in Rully. Bottled under Diam.

Drinking well now and worth holding five to eight years; serve at 10–12°C with oysters, grilled prawns or roast chicken.
