Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet Réserve comes from a single hectare of almost seventy-year-old vines on the mid-slope of the cru.
The finest vineyards of Chablis have each come to be associated with a particular grower, and for Côte de Léchet that grower is Domaine Bernard Defaix. The family holds nine hectares on the left bank of the Serein above the village of Milly, the largest single holding in the premier cru, with cellars at the base of the hill. Didier Defaix is also the site's only certified-organic vigneron, and the estate vines are farmed organically. Alongside the 1er Cru Côte de Léchet proper, the domaine bottles this Réserve from one hectare of old vines on the mid-slope, the aim being to show the layering and depth that vine age adds over the standard cuvée. Kimmeridgian marl and a steep, exposed aspect keep the wine taut and saline, while the old vines supply the flesh.
Drinking now and worth keeping eight years or more. Serve at 10-12°C with oysters, grilled snapper or a Comté tart.
