Description
Domaine Bernard Defaix Chablis is drawn from four parcels of mature vines around Milly and Poinchy, on the left bank of the Serein.
Village Chablis is the workhorse tier of the appellation, and its quality turns almost entirely on vine age and site. The Defaix family farms at Milly at the foot of the Côte de Léchet, and this bottling comes from four parcels of vines comfortably over 30 years old, all on the left bank of the Serein around Milly and Poinchy. Compared with the estate’s Petit Chablis, the older roots translate into more depth, more classical restraint and a heavier dose of the saline, stony character that Chablis drinkers look for. Fermentation is spontaneous, and the wine ages 10 months on fine lees in glass-lined tanks, so texture comes from the lees rather than from oak. It is bottled under screwcap.
Ready now and good for four to five years. Serve at 10-12°C with oysters, grilled prawns or a plate of charcuterie and cornichons.
