Domaine Bernard Defaix Chablis Grand Cru Bougros 2022

Domaine Bernard Defaix Chablis Grand Cru Bougros comes from the steepest of the seven grand cru climats, in the north-western corner of the slope.

Bougros sits below Preuses at the far end of the grand cru hill, with a notable south-easterly exposure and the sharpest gradient of any of the seven climats. Jasper Morris has described the Bougros style as like being smothered in a great big woolly jumper, big, fat, soft and round, which speaks to the texture the site delivers; he also notes that the upper sector, where this wine comes from, shows the classical minerality of Chablis alongside that weight. Domaine Bernard Defaix is based at Milly beneath the Côte de Léchet and is now run by brothers Didier and Sylvain. This wine ferments and ages in oak barrels with regular bâtonnage and is bottled after eighteen months. It is sealed under Diam.

Worth two or three years in bottle and capable of a decade. Serve at 10-12°C with lobster, roast turbot or a rich chicken dish.
