Domaine Bernard Defaix Petit Chablis 2022

Domaine Bernard Defaix Petit Chablis takes the bulk of its fruit from Kimmeridgian soil, unusual for an appellation normally planted on the Portlandian limestone above the slope.

Petit Chablis covers the plateau land at the margins of Chablis, typically the flatter Portlandian ground rather than the Kimmeridgian marl that carries the village and premier cru vineyards. Domaine Bernard Defaix sits at Milly at the foot of the Côte de Léchet, and the greater share of this cuvée comes from a well-placed parcel of Kimmeridgian soil on the slopes above Milly and Vaillons. It is a cool site, which is a liability in lean years and an asset in warm ones. Small parcels at Poinchy and Beines have since been added to fill out the volume. The wine ferments with indigenous yeasts and is raised in glass-lined tank with no wood at any stage, then bottled under screwcap, all of which keeps the fruit direct and the finish clean.

Best over the next two to three years. Serve at 10-12°C with oysters, a prawn cocktail or grilled flathead.
