Domaine Cauhapé Jurançon Ballet d'Octobre is the estate's lightest sweet wine, pure Petit Manseng from the October pick, offered here in a half bottle.
Jurançon lies in the foothills of the Pyrenees south west of Pau, where vines are trained high on wires to escape spring frost and the autumn is long enough to leave fruit hanging into winter. Domaine Cauhapé sits above Monein, where Henri Ramonteu built the estate up to some forty hectares of Gros Manseng and Petit Manseng on clay and silex. The dry foehn wind off Spain shrivels the berries on the vine rather than encouraging botrytis, so the sweet wines are made by passerillage, picked in successive passes from October through to January. Ballet d'Octobre is drawn from that first October pass, before the berries have concentrated far: pure Petit Manseng at around 65 grams per litre of residual sugar, fermented and raised in tank, and bottled here in 375 mL.
Gently sweet and lifted by Petit Manseng's acidity, it works as an aperitif or with foie gras, blue cheese and fruit desserts; serve at 8 to 10 degrees.
