Domaine Cauhapé Jurançon Folie de Janvier is the last and rarest pass of the harvest, Petit Manseng left on the vine into January.
Jurançon lies in the foothills of the Pyrenees south west of Pau, where vines are trained high on wires to escape spring frost and the autumn is long enough to leave fruit hanging into winter. Domaine Cauhapé sits above Monein, where Henri Ramonteu built the estate up to some forty hectares of Gros Manseng and Petit Manseng on clay and silex. The dry foehn wind off Spain shrivels the berries on the vine rather than encouraging botrytis, so the sweet wines are made by passerillage, picked in successive passes from October through to January. Folie de Janvier is the final pass, made only in years when fruit can hang past Christmas, by which point the berries are close to raisins. It is pure Petit Manseng at around 135 grams per litre.
Dense and honeyed but held together by the variety's acidity, it suits Roquefort, foie gras and dried fruit, or a glass on its own; serve at 8 to 10 degrees.
